Crock-pot Dinner: Chicken Veggies and Rice

Mom makes us many types of crock-pot dinners. They are so yummy! Here is one of our favorites.

1 cup of dried beans - pinto, northern, kidney, lima
1 cup rice
1 small zucchini
2 carrots
3 stalks of celery
2 cups of fresh kale or spinach
1 clove garlic (one clove in all this food won't hurt us, but you can leave it out)
1/2 tsp turmeric
2 tbls olive oil
1 750mg Tums (we need this for calcium)
3 boneless chicken breasts (about 2lbs)
5 cups of water


Ingredients

In the crock-pot place the rice and beans in the bottom. Dice up the zucchini, slice the carrots and celery. Place on top of the beans and rice. Tear up the kale and place on top of vegetables. Slice up the clove of garlic and place on top of the kale. Add the turmeric, olive oil and tums. Place the chicken breasts whole on top of everything. Pour in 5 cups of water. Turn crock-pot on low for 8 hours. When done use two forks to shred the chicken breasts and then mix everything. Let cool and serve. This will make several servings.

The best part about crock-pot cooking is you make several servings at once. Mom buys plastic containers to store in refrigerator or freeze the food. She buys 1/2 cup freezer bowls for the dachshunds and 3 cup containers for me the bloodhound. This recipe makes 15 1/2 cup servings. That is enough food for a week for a dachshund!

Feed twice a day.

How much to feed your dog:
Up to 10 lbs 1/8 to 1/4 cup
11 - 50 lbs 1/2 to 1 cup
51 - 100 lbs 1 cup to 1 1/2 cups
100 lbs or more 1 1/2 to 3 cups
This can be adjusted according to how active and thin your dog is. Very active dogs require more calorie intake and heavy dogs require less.

I just saw your comment over at Kari's (Hound Dog Blog) so I had to come on over. I have a pair of 8.5 year old bloodhounds - Beau & Lucy. They are so much fun, no?
